LITTLE CAY PLANTAIN SOUP


2   white onions
1 bunch celery
3 peeled carrots
6 peeled plantains
1/2 cup Garlic Cloves
1/2 cup Ginger
12   Bay leaves
4 TBSP Chicken base
4 quarts water
2 TBSP white pepper
2 TBSP salt kosher

1. Onions, celery, carrots finely diced (food processor), cook for 4-5 minutes in pan

2. Add plantains ginger, and garlic diced (food processor) with bay leaves chicken base and water in pot, bring to boil and simmer for 45-60

3. remove bay leaves and emulsify

4. add salt and pepper to taste.
