1. Wash and cook lentils with 4 cups of water.
2. Put aside.
3. Heat oil over med. heat in a pan and add the onion.
4. Saute for 2 to 4 minutes. Stir frequently.
5. Add carrots, celery and parsley.
6. Stir for a few minutes, till vegetables are cooked.
7. Add cooked lentil, boiling water, tomato paste, lime and salt and pepper.
8. Let simmer for 20 to 30 minutes.
9. Enjoy!
