ARTICHOKE GARLIC SOUP


1 Head Cauliflower
4 Cans Artichokes
1 Can White beans
8 Fl. OZ. Coconut milk
4 TBSP. minced garlic
1 TBSP. dried parsley

1. Saute cauliflower and artichokes with oil and butter in a soup pot until tender and they start to cook down, but do not brown or burn.

2. Throw in the garlic and parsley and continue to cook down for serveral mintues.

3. Then add the coconut milk and white beans.

4. Cook serveral more minutes.

5. Once this process is complete cover the mixture with chicken broth.

6. After that blend the soup until smooth.
