Banana Cake


3   Bananas (very ripe, large)
1 Cups Sugar
1/2 Cups Shortening
2   Eggs (separated)
1 tsp. Vanilla extract
2 Cup Flour
1 tsp. baking powder
1 tsp. baking soda
4 Tbsp. Sour Milk
1/4 tsp. Salt

1. Cream shortening and sugar.

2. Mash bananas; add then blend

3. Add egg yolks and vanilla extract

4. Add flour, baking powder and salt; alternating with sour milk mixed with baking soda.

5. Fold in stiffly beaten egg whites.

6. Bake in moderate (350 degrees) oven for about 30 minutes.

7. Frost with lemon frosting (optional).
