TIRAMISU (STRAWBERRY)


5   Egg whites (whisked)
5   Egg yolks
350 Grams Castor Sugar
500 Grams Mascarpone
    Savoiardi Biscuits
    Strong Black Coffee
    Vin Santo
    Strawberries

350 GRAMS = 12.3 OZ

500 GRAMS = 17.6 oz

1. Mix the coffee and alcohol together.

2. Dip the biscuits briefly in this mixture and line a 9 inch cake tin with them.

3. Whisk the egg yolks and sugar until light and creamy.

4. Add mascarpone to egg yolks mixture and mix until fairly thick.

5. Fold in the whisked egg whites.

6. Add a little rum or brandy to this mixture if desired.

7. Put half this mixture into the lined cake tin then put a layer of soaked biscuits and then the other half.

8. Leave over night in the fridge.

9. Turn out onto a plate and serve.
